Using the Whole Animal Sheep Processing Class
with Shelby Kolar and Mark Hay

Winter is just around the corner and all the animals are getting fat. Whether you are a hunter, raise your own meat animals, or want to take advantage of free roadkill meat, then this is the class for you!
Green University LLC raises a flock of Icelandic sheep on the wild grasses and forbs surrounding the Tobacco Root Mountains. The sheep assist with fuels reduction for fire prevention, as well as weed control at River Camp.
We start each year with a small flock of ewes and rams, which greatly multiply in the spring. We have the necessity and pleasure of learning how to humanely kill and process the entire animal for the most nutritious food this good earth provides.
Learn how to break down a medium-sized animal into food! We will:
- Quarter the animal
- Cut steaks, roasts and stew meat
- Braise legs
- Clean intestines for sausage
- Make organ sausage and haggis
- Render fat
- Preserve meat through making jerky and pemmican
- Make high quality bone and tendon broth
- Cook with blood
- We will be feasting a ton!
We will also show how to properly skin and gut an animal, preserve the hide for later tanning, how to harvest the brain for tanning and remove the horns, how to skin hocks for bags and remove the hoofs, tendons, sinews, bones and other parts for crafting.
This class includes instruction on how to humanely kill an animal with only a knife. We teach two kinds of cuts, including one that leaves the windpipe intact so that the animal can breathe throughout the whole process of its death.
We will kill two or more sheep. As a student you will be helping to catch the sheep and help hold him as he transitions, learn the ways to make the killing cut with a knife, and you will have the opportunity to skin, gut, quarter, and cook. We do the kills together with gratitude and reverence.
This course will take place at River Camp, a property on the Jefferson River near Cardwell, Montana. Plan to camp in your own tent, car, or camper. Bring snacks, your knife and cutting board, and appropriate clothing for Fall weather. Also consider bringing a swimsuit and towel as we often go to a local hot springs to relax at the end of the day. We will check in with each student by phone prior to the class to make sure you come fully prepared.

The cost for this three-day experience is $300. To register, please fill out and mail in the Medical History (PDF) and Liability Waiver and Release (PDF) forms, along with a check for $150 to reserve your spot. The balance can be paid upon arrival. Or register online through the shopping cart system and send the paperwork separately.
